Mushroom and Red Onion Tart
This tart is an excellent dish that's sure to bring everyone to the table all at once! It's also great for parties, as it serves a lot of people with great food!
Serves 8-10
Ingredients
- 200ml Creme Fraiche
- A few sprigs of thyme
- 4 red onions
- 80g butter
- 4tbsp olive oil
- 500g mushrooms, sliced
- 2 tbsp chopped parsley
- 1 garlic cloves, chopped
- 400g puff pastry
- 8 to 10 slices Wicklow bawn cheese
- Salt and pepper
- Chives and rocket for garnishing
Method
Preheat oven to 180C / 350 F / Gas 4.#1: For the topping, strip 2 sprigs of thyme and mix with the crème fraiche.
#2: Season with salt and pepper.
#3: Peel and chop the onions.
#4: Cook slowly in a saucepan with ½ the olive oil and butter until softened.
#5: Pan fry the mushrooms in the remaining olive oil, add the chopped garlic parsley
To Prepare the Tart
#1: Roll out the pastry to about .05cm in thickness.
#2: Using a scone Cutter as a guide, cut 8 to 10 circles.
#3: Prick the centres with a fork.
#4: Place the onion in the centre of each, then the mushrooms on top, followed by the creme fraiche and thyme. Finish with slices of Wicklow bawn.
#5: Line a large baking tray with baking parchment and bake for 12 to 15 minutes.
#6: Garnish the top with a little rocket salad and chives drizzle with olive oil
