Sweet Potato Soup

Why We Love It
Sweet potatoes are much more nutritious then regular potatoes. Like carrots, they are good for your eyes as they contain Vitamin A.
The soup can be spiced up with chilli powder for extra flavour or can be made with apples for sweet tooths!
This recipe also contains cauliflower, which is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6 .
What You'll Need
2 x Sweet Potatoes
2 x Carrots
1 x Onion
2 x Sticks of Celery
3 x Cloves of Garlic
2 x Tbsp Olive Oil
½ x Head of Cauliflower
1 x Litre Vegetable Stock
1 x Tbsp Fresh Rosemary
Salt and Pepper to Taste
Method
Chop onions, carrots, celery and cauliflower. Peel and cube sweet potatoes. Mince garlic.
In a large saucepan, sauté the onions, carrots,celery and the garlic in the olive oil. Allow to cook and soften for 5 minutes.
Add the sweet potato, cauliflower and chopped rosemary. Stir and cook for a further 5 minutes and then add the vegetable stock.
Bring the broth to boil and then turn heat to low and cover the saucepan. Let simmer for 30 minutes.
When the broth is ready, use a hand blender to liquidize the soup.
Pour mixture into thermo flask in order to keep warm for lunch!
