Kids will love these pizza quesadillas as they are a fun and delicious alternative to the normal ham sandwich. Plus, who doesn't look forward to pizza?
Because this recipe is so versatile, you can literally use up whatever is leftover in the cupboard!

What You'll Need
2 Tbsp x Olive Oil
4 Tbsp x Tomato Sauce
1 x Chicken Fillet
1 x Canned Pineapple
1 x Canned Black Beans
1 x Canned Sweetcorn
1 x Onion
2 x Cups Mozzarella Cheese
2 x Mixed Bell Pepper
¼ Tsp x Red Pepper Flakes
4 x Soft Flour Tortillas
Method
Cook the chicken fillet with a tablespoon of olive oil in a pan until cooked through.
While the chicken cooks, drain the pineapple and chop into smaller chunks. Drain and rinse black beans and sweetcorn. Chop the onion and the peppers. Mix all the chopped veg in a bowl with the pepper flakes, salt and cheese.
Once the chicken is cooled, chop or shred the chicken into small chunks. Add the chicken to the mixed veg and stir.
Place a half a cup of the quesadilla mix on a tortilla and spread on one side. Fold the tortilla over and cook on a skillet on medium heat until golden on one side. Then flip and cook the other side. If you think you need it, you can use some olive oil to avoid the tortilla sticking to the skillet.
