Mixed Bean Burritos

Tasty

Easy to Make

Diabetic friendly

Why We Love It

Did you know?
The balance of complex carbohydrates and protein provides a slow, steady source of glucose instead of the sudden surge that can occur after eating simple carbohydrates. This means beans are great for people who have diabetes!

The health benefits of cumin include its ability to aid indigestion, improve immunity and treat piles, insomnia, respiratory disorders, asthma, bronchitis, common cold, lactation, anemia, skin disorders, boils and cancer.

What You'll Need

1 tbsp x Olive Oil
1 x Large Onion
400g x Tinned Mixed Beans
1 tsp x Oregano
400g x Tinned Chopped Tomatoes
1 tbsp x Tomato Puree
1 tsp x Ground Cumin
Pepper & Salt
4 x Tortillas
50g x Cheddar Cheese

Method

Add some oil to a medium sized saucepan. Cut the onion ut it in the saucepan for about 8 minutes until golden.

Put the chopped tomato, puree and oregano into the saucepan. Next add the beans and stir and bring to boil.

Lower the heat when it starts to boil. Simmer for 10 minutes with the saucepan half covered with the lid. Stir the beans every now and then.

Add some salt and pepper and it tastes to your liking. Leave on the heat for another 5 minutes.

Add the bean mixture onto a warm tortilla. Top it with some guacamole and sprinke some cheese on it.

Fold the tortilla over on two sides and get it as tight as you like.
