Why We Love It

Cous Cous, the food so nice they named it twice! This little miracle dish is a great excuse to use up any fruit or veg you have in your pantry!

Pumpkin seeds can reduce the risk of obesity, diabetes and heart disease and they are high in magnesium which is good for your muscles!

Sunflower Seeds are a great source of Vitamin E which can help with symptoms of asthma and can prevent cardiovascular disease!


What You'll Need


200g x Cous Cous
300ml x Vegetable Stock
1 x Yellow Pepper
1 x Green Pepper
1 x Handful Dried Cranberries
1 x Handful Raisins / Sultana
1 x Red Onion
1 x Handful Pumpkin or
Sunflower Seeds
1 Tbsp x Olive Oil
1 Tbsp x Lemon Juice






Method


In a large bowl, pour the vegetable stock over the couscous while still boiling. Cover the bowl immediately and let stand for ten minutes, the couscous will absorb the stock and cook itself.


Chop and deseed the peppers and chop the onion. Mix with fruit in a large bowl and toss mixture with olive oil and lemon juice.


Use fork to separate the couscous until light and fluffy. Add the vegetable and fruit mixture and add the seeds.


Couscous is so versatile, you can use almost any fruit or veg and it will work well. Spring onion, apricots or figs will all work well as subtitutes in this recipe.
