Rocky Road Pancakes
Ingredients
100g plain flour
100ml milk
30g butter (melted and cooled)
2 large eggs, beaten
1 sachet (1stp) Dr. Oetker Baking Powder
Pinch of salt
100g digestive biscuits
100g Dr. Oetker Milk Chocolate Chips
1 pack Dr. Oetker White Mini or Heart Marshmallows
Method
- Sieve the flour, Baking Powder, salt and sugar into a large bowl.
- Make a well in the centre and add the milk and beaten eggs.
- Gradually mix the ingredients together until there are no lumps.
- Mix in the melted butter and the digestive biscuits; the butter will help with frying.
- Ladle into a hot pan. When the bubbles start to form turn over and sprinkle with Mini or Heart Marshmallows and Chocolate Chips which instantly start to melt for a delicious Rocky Road topping. Serve warm.
