Why We Love It

Teens are always looking for a detox diet that will give them healthy skin, hair and nails. Be the cool parent and let them in on this salad secret!

Black beans are one of the world's super foods with their high protein punch and their soluble fibre which helps with digestive issues such as constipation!

Add a pinch of cayenne pepper to give the salad an extra burst of flavour, it will also boost your metabolism!


What You'll Need


800g x Black Beans
2 x Red Bell Peppers
300g x Sweetcorn
2 x Cloves Garlic
1 x Shallot
9 Tbsp x Extra Virgin Olive Oil
Salt & Cayenne Pepper to Taste
2 x Tbsp Sugar
6 Tbsp x Fresh Lime Juice
1 tsp x Fresh Lime Zest
½ x Cup Chopped Cilantro
2 x Avocados





Method


Dice the peppers, crush garlic, mince the shallot shallot (only use 2 x Tbsp of minced shallot) and mix all ingredients except avocado in a large bowl and mix well.



Don't add the diced avocado until you are packing the salad for lunch. It's best to make this salad the night before and let the flavours soak into each other while in the fridge overnight.
