Why We Love It

Banana Bread is a great alternative to chocolate and sweets which aren't allowed in most schools. The best of all, you only need one bowl to make this recipe so minimum clean is required, always a plus!

If you want, you can add some pecans, raisins or anything else you think might work. Just add any extra ingredients after folding in the flour and mix well.

This recipe contains no sugar, uses coconut oil and white whole wheat flour (which is much healthier than all-purpose) so you can rest assured this dessert is as healthy as it gets!


What You'll Need



2 x Large Bananas
Cup x Coconut Oil
½ Cup x Honey
2 x Eggs
¼ Cup x Milk
1¾ Cups x White Whole Wheat Flour
1 tsp x Baking Soda
1 tsp x Vanilla Extract
½ tsp x Salt
2 tsp x Ground Cinnamon







Method


Preheat the oven 165°C and grease a 9 x 5 inch loaf pan. Mash the bananas.



Whisk the oil and honey together. Add the eggs and whisk again until combined. Stir through the mashed bananas and the milk.


Then add the baking soda, vanilla, salt and half a teaspoon of cinnamon ( leave the rest for later) and whisk together. Fold in the flour gently until well mixed. The mixture does not have to be free of lumps!


Pour the batter into the loaf pan and sprinkle another teaspoon of cinnamon on top. Stick in the oven and bake for about an hour or until a knife emerges from the bread clean.


Let the bread cool before transferring to a wire rack and allow sit for twenty minutes before slicing. Will stay fresh in the fridge for 3 - 4 days or in the freezer for about 3 months.
